Simple Chia Jam

Whether you’re a PB&J pro or looking for something sweet to top your scone with, these quick jams are simple and seasonal. These jams can be stored in the fridge for up to 7 days.

Ingredients

Strawberry Chia Jam

200 g fresh strawberries, quartered

2 Tbsp chia seeds

 

Fresh Apricot Jam

400 g fresh apricots, pitted and chopped

100 g caster sugar

2 Tbsp lemon juice

 

Plum Jam

900 g fresh plums, pitted and quartered

60 mL water

100 g sugar

Preparation

Strawberry Chia Jam

  1. In a small saucepan, combine the strawberries and 60 mL water over a low heat. Cook until the strawberries are soft. Mash with a fork. Add in the chia seeds. Cook for an additional 5-10 minutes or until a jam texture has formed.
  2. Place in a jar, cool and refrigerate to set.

Fresh Apricot Jam

  1. Combine the apricots, lemon juice and sugar in a pan. Cook over a medium heat, stirring often, until thick, about 25 minutes.
  2. Place in a jar, cool and refrigerate.

Plum Jam Instructions

  1. In a pan, combine the plums, water and sugar. Place on the hob and bring to a simmer, stirring often. Cook for 10-20 minutes or until the plums have cooked down and mixture has thickened.
  2. Place in a jar, cool and refrigerate.
