Fruitcake Overnight Oats

We don't want to 'b-oats', but this fruitcake overnight proats recipe is the bomb! So put down the tea cake and mix this up instead.

Ingredients

  1. 750 mL unsweetened almond drink

    100 g gluten-free oats

    2 Tbsp dried pineapple

    2 Tbsp dried cherries

    2 Tbsp pecans, chopped

    2 Tbsp maple syrup

    1 tsp ground cinnamon

    1 tsp vanilla extract

    1 scoop vanilla Vega® Essentials

 

Preparation

  1. Bring the almond drink to a boil. Once boiling, add the oats and continue to boil for 1 minute.
  2. After 1 minute, remove from the heat and add the rest of ingredients and stir until well incorporated.
  3. Cover and let sit for 6-12 hours.
  4. Enjoy either at room temperature or slightly warmed. If warmed, place desired amount into a small pan and warm on a low heat. If the oats are too thick, thin with some almond drink until you get the desired consistency.
