Sweet Potato Fritters

Looking for a 'spud-taneous' dinner recipe that's quick and easy? Then this sweet potato fritter recipe is for you!


2 Tbsp ground flax seeds

6 Tbsp water

5 sweet potatoes, grated

4 medium sized carrots, grated

¼ onion, finely chopped

50 g gluten-free flour

2 tsp garlic powder

1 Tbsp curry powder

½ tsp salt

¼ tsp pepper

Oil, for frying


  1. Combine the ground flax seeds and water in small bowl and whisk until fully mixed. Set aside.
  2. Combine the remaining ingredients in large bowl. Mix well.
  3. Heat a frying on a medium heat, adding enough coconut oil to completely cover the surface of the pan.
  4. Form the mixture into pancake-like patties, and place on the hot pan. Cook each patty until browned on either side.
  5. Remove from heat and enjoy!
