Ingredients
2 Tbsp ground flax seeds
6 Tbsp water
5 sweet potatoes, grated
4 medium sized carrots, grated
¼ onion, finely chopped
50 g gluten-free flour
2 tsp garlic powder
1 Tbsp curry powder
½ tsp salt
¼ tsp pepper
Oil, for frying
Preparation
- Combine the ground flax seeds and water in small bowl and whisk until fully mixed. Set aside.
- Combine the remaining ingredients in large bowl. Mix well.
- Heat a frying on a medium heat, adding enough coconut oil to completely cover the surface of the pan.
- Form the mixture into pancake-like patties, and place on the hot pan. Cook each patty until browned on either side.
- Remove from heat and enjoy!
