Let your slow cooker do the work for dinner tonight. Toss all the ingredients in your slow cooker in the morning, and have a delicious hot meal ready after work.
Ingredients
2 onions, diced
4 cloves of garlic, crushed
1 inch piece of ginger, grated
2 x 400 g cans chickpeas
1 x 400 g can chopped tomatoes
1 x 400 mL can coconut milk
1-2 Tbsp curry powder
Salt
½ bunch coriander
Basmati rice
Preparation
- Combine all the ingredients, except the coriander, in a slow cooker. Cook on low for 6 to 8 hours.
- Once finished stir in the coriander and serve over basmati rice.
