Protein Ball Fruit Skewers

Your picnic game is about to go up a notch! Add a protein ball twist to the classic chocolate dipped fruit skewers and your friends will thank you.

Ingredients

Chocolate Covered Fruit

150 g dark chocolate

2 Tbsp coconut oil

10 large strawberries

2 large bananas

 

Protein Chocolate Balls

125 mL nut butter of choice

50 g oats

25 g cocoa powder

1 Tbsp vanilla extract

4 Tbsp maple syrup

1 scoop (37 g) Chocolate Vega Clean* Protein

Handful desiccated coconut

Preparation

Chocolate Covered Fruit

  1. Wash and dry the strawberries, set aside with the green tops still attached. Peel and cut the bananas into 1 inch pieces and set aside.
  2. In a pan, melt the chocolate and coconut oil on low heat, stirring regularly.
  3. Once the chocolate has melted, remove from the heat and with one skewer coat the fruit in chocolate.
  4. Once all the fruit has been covered in chocolate, place on baking paper and let set in the fridge or freezer.

 

Protein Chocolate Balls

  1. In a medium sized mixing bowl combine the nut butter, oats, cocoa powder, vanilla, maple syrup and Vega Clean* Protein. Add a little water to combine it mixture too dry. Once mixed together roll into balls. (It should make 10-12)
  2. Place the desiccated coconut in a small bowl and roll the balls in the coconut until fully covered.
  3. Set aside in the fridge.

 

Assemble the Skewers

  1. Take the fruit and protein balls out of the fridge and place on a skewer. Each skewer should have one strawberry, protein ball, and banana.
  2. Serve and enjoy.
