Cashew Vanilla and Coconut Balls

These delicious cashew and coconut creations are ideal for munching on the go. Make a big batch and toss a few into your bag before you leave the house – snacking made easy!

Ingredients

100g cashew nuts
7 Tbsp desiccated coconut (4 Tbsp in the mix, 3 to coat)
100g dried apricots
1 scoop (35g) Vanilla Vega® Clean* Protein
1 tsp vanilla extract

Preparation

  1. Add the cashew nuts and 4 Tbsp of desiccated coconut to a food processor and process to a fine powder.
  2. Add the apricots, Vanilla Vega® Clean* Protein and vanilla extract. Continue processing until the mixture binds together into one lump.
  3. Roll the mixture into 10 walnut-sized balls.
  4. Roll the balls in the remaining desiccated coconut and store in an airtight container for one week or in the freezer for up to one month.
