You would never know there are greens in this light refreshing almond smoothie parfait. Since this parfait looks so beautiful this could double as a dessert; toss it in the freezer for 30 minutes and enjoy.
Ingredients
125 mL plant-based alternative to yoghurt
100 g pineapple
1 banana, frozen or fresh
1 scoop (34 g) Vanilla Vega® Essentials
125 mL almond drink
4 ice cubes
Toasted almonds, chopped
Handful of fresh blueberries
1 Tbsp shredded coconut
Preparation
- Place your plant-based alternative to yoghurt of choice in a bowl.
- Place all the other ingredients (except toasted almonds, blueberries and coconut) in blender and blend until smooth.
- Layer the smoothie on top of the plant-based alternative to yoghurt and garnish with chopped almonds, blueberries, coconut or any other fresh or frozen fruit you have kicking around.
