Chocolate Protein Breakfast Muffins

Chocolate for breakfast? Yes please! Pamela (spamellab) has given us the perfect excuse with her chocolate protein packed breakfast muffins using our Clean* Protein. Ingredients

150 g rolled oats

50 g ground almonds

4 Tbsp cacao or cocoa powder

2 scoops vanilla Vega Clean* Protein 

1 teaspoon baking powder

250 mL almond drink

4 Tbsp maple syrup

1 tsp vanilla extract

 

For the topping

150 g coconut plant-based alternative to yoghurt

1 scoop vanilla Vega Clean* Protein

2 Tbsp cacao or cocoa powder

2 Tbsp maple syrup

Preparation

  1. Preheat your oven to 180°C/160°C fan/ gas mark 4 and lightly grease a 6-hole muffin tin.
  2. Place all of the muffin ingredients into a blender and whizz up until mostly smooth.
  3. Divide between the 6 muffin holes and bake for 15-20 minutes until risen and firm. Leave to cool.
  4. Meanwhile, beat together the topping ingredients until quite thick, and keep in the fridge. Once the muffins have cooled, spread the topping on the muffins. Top with cacao nibs and freeze dried raspberries if you wish, and enjoy!
