These tasty truffles are perfect for an ‘al desko’ afternoon pick-me-up, or when you’re on the move and in need of a quick chocolate fix. Be careful though, it’s a struggle to stop at just one!
Ingredients
100g brazil nuts
4 Tbsp cocoa powder
1 scoop (37g) Chocolate Vega® Clean* Protein
6 medjool dates
20g peeled fresh ginger
1 tsp vanilla extract
Preparation
- Add the brazil nuts to a food processor and process to a fine powder.
- Add 2 Tbsp of the cocoa powder and the remaining ingredients to the food processor, and process until the mixture binds together into one lump.
- Roll the mixture into small truffle-sized balls. Place the remaining cocoa powder onto a plate, and roll each ball in the cocoa powder to coat.
- Store in an air tight container for up to a week or in the freezer for up to one month.
